Make sure you have a Ranger (or any gnome) with Animal Husbandry activated.
Ranger is the default Class one of your Gnomes starts with. Check if you still have it, if not assign one of your gnomes to the task. Then either select the profession template (in population and there on the Professions Tab) or click on the gnome with Animal Husbandry activated, and search the Job Task Priority Window.
Here you want to move "Pastures" up to near the top spot. This will make your Ranger care for the animals (milk them for milk).
Also its advisable, that, if you have any body of water your gnomes can safely reach, that you construct a well for emergency purposes. A well requires a Block (made by a stone carver) and a barrel (made by a carpenter), and has to have access to a body of water. Construct that, and you'll have an emergency source of water.
Male Yaks do not produce Milk, so you might want to butcher 2 of them, as MeatTheGamer said, since you only need 1 male Yak to breed.
Also consider foraging on the rest of the map, outside your kingdom (which can be dangerous), which can get you fruit you need (strawberries, Apples and Oranges).

Word of Advise.. you should have 1 Food 1 Drink per Gnome per Day for the Winter + 6 more days in early spring (this should get you to your next harvest). This means to get to the winter you need a stockpile of ~20 food and Drink per Gnome. Also a stockpile of 20 straw/seed (for birds) per Animal or your animals will run away/starve
Butchering the 2 male yaks will get you some meat.
Go population - professions. On the right side you see priority list. First select Rancher job from dropdown, then move pasture to top or at least over workshop, hauling, construction.
