how does the water tank work?
like, does there need to be water nearby to actually gather? or does it produce it on it's own? like, i feel stupid but i can't tell if it's actually making water or if i have to gather water anyways

All the water tank does is allow a rat to go gather water from wherever there is some. I'm not sure if it has a "radius" of affect, but yeah. They don't even take it to the water tanks, it still goes in your box.

It act like any other gathering post. It doesn't store/collect water on its own. You need to assign a rat to work on it then set the radius in case you want to control it more.

Wait- There's a way to set the radius in a building? I'm not sure I even noticed that option!

any idea how to get more water then? because my starting location is garbage and there's barely any water, and i can't keep waiting for rain

For now, it's just a very limited method to gather water until it gets changed. Right now, water is... kind of in a weird spot as a resource. Not easy to just tap into and it turns into a collectible once "broken" from its source block. I think they really ought to revise how water works at a categorical level.

All you can really do is set up a water tank near a pond or underground spring. Otherwise, you might want to create a retention pool to collect rain water. There's no other way to gather water for now.

Because farms need this a lot, it might just be easier to build a gathering camp and a silviculture post for collecting wild grain, grass fiber, and whatever else might be around. I don't know how reliable rainwater is as a means of collecting water in the game right now.

1. dig a huge hole from the from the surface, wait for rain.
2. build rain collectors on the surface

Get the spider dew building and go find some spider homes. 4 webs gets you 1 water generator. You need 1 of these for every 2 grain plots (and 1 water hauler for every 3 water generator)

Some of the biomes with fish have these squishy anemone looking creature things. If you can find one, they ~create~ water! Got lucky and found a couple during my last city.

You can make a mini storage and force it to accept only water as like a water tank.

Actually, there is a structure which collects water 'from air'. It is Deweb. Make a place for your water pool. Put deweb above on 2 block and it will drop water down.
I bullt 3 dewebs one above another above one pool. and they produce decent amount of water every day.

If you find a couple of water tiles, it is best to just go there and gather it all up yourself. One of the quickest ways to get experience and upgrade a skill. Quick and easy.
