Those games might be graphically more demanding, but you need to check both CPU and GPU utilization in all 3 games. Use AMD overlay for that, there are tracking metrics for CPU and GPU utilization. Legion is very CPU intensive, so it may require a bit more power than those games.
By the way, are you playing using DX11 or DX12?
Try to compare DX11 Ultra settings with DX12 Ultra settings. DX11 is less optimized, so GPU utilization should be significantly lower as well as fps. As a result the game must be more stable even on Ultra preset.
If confirmed it's either your PSU don't give enough power to your GPU, try to downclock your card and undervolt it. Or your GPU doesn't receive enough power, because of overclocking, undervolting.
At least that's how it worked for me. I have RX6600 and Ryzen 5 3600. The game randomly freezed and closed, while all other games were stable. My PSU was way too old 500w one, so I bought a new one. Then Legion stopped crashing in DX11, but continued to crash in DX12, especially when ray tracing was enabled. Then I added 10 mV on top of undervolting recommended by AMD driver as stable. and it stopped crashing in DX12.
Create a tuning profile for Legion, limit GPU power usage, underclock the card or extremely undervolt it, and use default fan speeds just for tests. It wouldn't affect other games anyway, but you will see if the game crashes the same way when there are not enough power for GPU.
In my case crashes were exactly the same, they just happened way faster.
Besides Legion is an open world game with lots of moving AI parts (pedestrians, schedule simulations, cars, drones), some heavy graphical effects like ray tracing, so it may require lots of power sometimes. Some online missions are especially unstable for lots of people.
Assuming your Raidmax Cobra PSU is the issue... Your 5700XT requires 2 PCIe connectors. Try to connect your card using 2 separate cables. If you already did that, try to swap them or reconnect them on both sides.
Try to find which exactly Ultra setting crashes the game. I would bet on geometry, environment or texture/shadow resolutions. You can always lower textures and just add 10-15% of sharpness in the game settings.
And create a tuning profile for Legion with lower GPU boost clock (reference is 1905 MHz according to AMD specifications[www.amd.com]), a bit of downvolting and default fan settings, it also might help.
Legion is not optimized for an older hardware, but i can see why the game is more demanding. I have all Watch Dogs games installed, and WD2 does only few things better than Legion: soft shadows, independent extra details slider and may be water.
Even without ray tracing Legion has more detailed and complex reflections. Reflections in windows buildings and on cars have significantly higher resolution and they're constantly updating. Textures and materials are better looking and more varied. People on the streets are more detailed, because you can play as them. Skin looks better and have subsurface scattering. Sky and clouds are better, overall lighting is better. TAA (and a bit of sharpness) makes the game very clean compared to WD2.
With DX12 I get the same fps I have in WD2 on high settings with DX11, meanwhile almost all Legion's high settings look better than WD2 very high/ultra. The difference in visuals is especially noticeable when it's raining.
So overall power usage might be the same between Very High and Ultra settings, but CPU might require more power on Very High, while GPU might require more power on Ultra.
Anyway, If you're sure that it's not your PSU, and your PSU is connected to your GPU the right way[imgur.com], just try to find which Ultra setting crashes the game.
