Lots of armor and accessories have elemental resists on them, check your equipment/inventory, you probably have some and don't even know it.
Also, if you have the ring of might equipped, this makes you take more spell damage. Not good especially if you're getting oneshot. Make sure you don't have weakness to wind on some of your characters.
This. Check your equipment to make sure nobody has a weakness to wind. Also check that you’re not using the IC specialty “Train” for this boss fight, as that lowers your characters’ stats.
Also, Rena/Celine’s Angel Feather and Reflection spells provide party-wide buffs that mitigate elemental damage, which may help prevent you from getting one shotted from winds of destruction.

Make sure to go to your Specialties and turn OFF Training
You can also do Cooking, there are lots of food effects that will boost the whole party. IT's worth it to spend time in the Master Chef arena, getting special ingredients and doing cooking.
There are tons of battle items you can craft and use.
