I tried a run with blacksmith, paladin(for heal) and squire(for stoneskin at lv3), using the star amulet to supplement the paladin's low healign power. I ended up getting two sets of heavy armor and some shields out of the blacksmith, and managed to reach the boss room on that. But once there, my characters did very poor damage to the bosses.
I think I'd need a source of magic damage. Maybe later I could substitute the squire for a geomancer, or substitute the paladin for a cleric and hope I get the flamethrower mace.
The dark knight is technically a defensive class that gets access to a good spell(plague) at lv2, but plague is profane and fighting ghouls with extra action points sounds rough.
My team was Paladin (>70 def at the end, and 121 HP), Blacksmith (with 89 att, lvl 10), and Geomancer (~70 mag, 10 lvl).
The hardest part is the begining, where you need lots of luck to get some decent equipment with blacksmith. Geomancer's stine skin is also crucial.
Up until 2nd floor - Paladin does all the damage and takes all the hits. Fire-lance is crucial, since you choose defence over attack.
After getting a decent wide-striking axe - Blacksmith takes the lead in damage.
On the 3rd floor - Geomance becomes even harder hitter.
Starting with second floor room 1 I was strong enough to beat reinforcements, hense all but Paladin ended up on max level :) After 3rd wave of reinforcement you can actually get to the max level with healing or other XP farming speels, as you can take as many turns as you'd like, but it takes forever - I didn only once for ~30 rounds to give everyone extra level on 2nd floor.
Upgraded Brigandine gives you the "Last Resort" action (1 AP) --> refunds all your AP for the cost of max fatigue (x5 Fatigue) which can then be cleared with Refresh (2 AP), rinse and repeat as many times as you want. The main trick is to always have 1 AP left so you can actually use the Last Resort and start the process all over again...
Important note: For this to work you must have at least 4 APs on that character you gonna use the exploit with (which you should get automatically by the time you get to legendary items anyway, naturally). Rest of the math is simple => you need 1 AP to use the LR + 2 AP to Refresh + 1 AP to do any action (moving, attacking, teleport or whatever you want that costs exactly 1 AP). Ofc if you have max of 5 APs available then you can do more shenanigans with all actions that costs 2 AP (except any action that gives +fatigue).
So I'm guessing you just need a good RNG and a lot of restarts to achieve exactly that. But mainly yes, healer from the start and preferably +def perks just so you can reach later shops, to farm chests and hope to get Brigandine in any way possible if you decide to go this way. :)
