On Steam, right-click on DCS World in your Library, select Properties, then DLC, then which modules you would like to try.

It will try to start DCS, click the x on the window that pops up (it will launch before downloading the modules otherwise), you can do that to all the modules you want, it will start downloading in the meantime
In the DLC tab. Or just open the DLC page in steam store and there is "play now" button.

it lqunches the game, then the plane chosen is still not available
Did you try any quick mission or multiplayer? Also If you donwloaded the addon that works in Open Beta only, you have to install the OB version of game first.
Yes, those addons, specially with 4K textures and surround sounds have some size. And also the terrains. The size of terrains is around 15-40 GB each one.
