Also consider that there is no "perfect" throttle setting. You will move it constantly in order to hold position in a formation - very little tho but move it nonetheless.
With the Viper, try to use your FuelFlow as an indication of how to set your throttle initially. This helps getting on speed with your flight lead or tanker. The rest is more or less muscle memory training :)
For your tanker, merge on its left wing and fly formation for a bit. Watch your FF to judge the throttle setting matching its speed. Then get into precontact position.
I suggest you try flying formation with other planes before trying AAR. Until you feel comfortable with your inputs, train yourself to small and sensitive inputs on your throttle.
