Clear the throttles.
Axis Assign and move the joystick throttle, once detected OK.
Axis Tune, check the Slider box. OK.
For each aircraft.
Also, introduce some dead zone and curve to all 3 axis, including the rudder, for all aircraft.
About 5-10 dead zone and 20 curve respectively.
Could you double-check the configuration. There is different setup for "sim mode" and "game mode". Also make sure you approve changes by Ok and not cancel at any point.
If it works in FC3 it should work in other modules as well. What happens when you use the Axis assign option? Does it recognize throttle input?
Also, what module are we talking about? Some modules have a throttle detent, i.e. the throttle can't be moved unless you LIFT the throttle from off to idle position. This level of simulation is not available in the FC3 planes which might explain your problems.

Have you mapped throttle detent/lock to a key? The Logitech stick won't handle this out-of-the-box. I began with a Logitech Attack once, and it worked just fine if everything is mapped properly. I can almost bet on that throttle lock is the problem here.
It does recognize input in axis assign, and I can see the input in axis tune. In the actual Sim, though, the slider does nothing. I tested it by mapping it to rudders, that didn't do anything either.
I want to fix this, I'm finaly not ♥♥♥♥♥♥♥♥ at playing DCS!
Never heard of anyone having the same issue to be honest. Either the throttle input works or it doesn't in my experience.
Since it obviously works in FC3 and you claim the mapping is correct for all the other modules, the only thing I can think of is pilot error unless something is messed up with your DCS files. Do you get the same result if you start a flight mid-air? Have you tried deleting the controller profile (for DCS that is) and then "build" a new one from scratch?
I agree with this.
Either it is locked in cockpit (and you must press something like "home" once to release it) or the control setting is not saved somehow.

The rest all have some sort of detent/locking. And these locks aren't all mapped the same by default. Some use RWin+Home (the F-86 needs that combo to be pressed TWICE before you can move the throttle) and some have their own bindings in the control options. Look for 'Throttle to START', 'Throttle to IDLE', 'Throttle lock', 'Throttle detent' and similar phrases in the bindings list.
