The manual and training videos need updates, as it can be confusing.
Use the DCS F-15C manual instead of the FC3 one.
'A' is autopilot ATTitude hold. LAlt + 4 ALTitude hold.
Yes the real F-15C only has 2 Autopilot modes.
Hold 'S' while taxing for nose wheel steering angle increase.
The Russian jets have more modes, including radio terrain following and way points following and landing approach. Su-33 also has speed hold mode. The autopilot on Rus jets uses trim and leaves it where it's at after turned off, which helps to auto-trim instead of manually.

You can't turn it on at any time. You pretty much have to be flying near level with no more than 5 degrees (I think) up/down/roll, so when flying flat you can turn it on and it works. If you are doing a maneuver or flying straight up it will not engage.
-When I press A (Attitude hold), the AP engages itself (with the light in the bottom right) and it keeps the current attitude. If I add any input, it will disengage, and once I release the joystick it engages itself again. It completely disengages itself when the bank is about 60 degrees.
-When I press H (Altitude hold), nothing happens. But if I enable Attitude hold, then Altitude hold, (with a pitch of about 5 degrees max), it activates Altitude hold (and i get both lights in the bottom right). And if i add too much pitch input, both deactivate completely at the same time. If I gently roll the aircraft, they behave like the Attitude hold (deactivate while you're changing the direction, then activate again).
So (according to this experiment), if you want to hold your altitude, you have to align the aircraft with the horizon, enable Attitude hold, then Altitude hold.
That seems strange though. I must be missing something.
And I also noticed that the Altitude hold AP uses trim control, like the russian aircrafts.
It should open download of PDF document.

Hold altitude is not H, it's LAlt 4.
You must already bring the aircraft to the stable holding position, within 5 degrees and low or no climb/descend, in order for the Autopilot ALT mode to activate. Moving a stick a bit disengages it. ATTitude hold should be engaged prior to the ALTitude hold.
Also note that if your stick is not perfect, or even if it is, set a dead zone to at least 5 and a curve to 20-30 for all 3 axis, including the rudder. This will allow for user/pilot error and provide precision towards the center. Described on page 128 of the DCS User Manual.
