As someone who actually works on game engines on a regular basis, I'd be happy to argue this with you somewhere else. The engine is a hacked together hodgepodge of bad design. That said, I didn't make the claim the engine was weak (though that is in fact the case). I claimed that it was a weak sim.
And that's absolutely fine. The tradeoff for this however is that it becomes less a simulation and more of an arcade experience.
Your dream has come true. WinSPMBT does it but it is a turn-based wargame, not a real-time one. And it is free to play.
If you haven't tried out the AH-64D Apache Longbow by Nodunit and Franze you should check it out now they got a version for Arma 3, it has some bugs but it's still really fun.

Get the version 1.4 for Arma 3 and then download my version of DUWS https://github.com/Emton/DUWS-Longbow/blob/master/%5BSP%5DDUWS-Longbow-12.Altis.pbo
to fly it on, DUWS makes an excellent target rich environment for flying the Apache.
Unfortunately the overall game suffers from the free-to-play design which makes me slightly ill to my stomach. But if you can swallow that pill, then the aircraft sim mode can be fun and is readily available for multiplayer combat. I don't have a lot of unlocked planes as I'm an older player and am more than happy to put 40 hours into a single aircraft, but the flight mechanics do differ from plane to plane (this is not saying they are good, bad, realistic or otherwise). I also often play in realistic mode due to the fact that sim mode changes as to allowable planes everyday and if you limit yourself to cockpit view in "realistic mode", it is a bit like playing IL-2 1946 with HUD icons enabled and probably some engine management stuff off, but I'm not sure.
It is one of the few experience you can have flying WW2 planes against player controlled AA. Which can be fun.
The question was about simulators.. War Thunder does not match the definition..
Have you tried DCS Huey yet? ;)
Arma 3 and Takeon could be considered "simcade" - still not full simulators.
