Check your game directory e.g. \DCS\mods\aircraft\...
Select your desired aircraft and you will find a folder "doc" inside each module, containing the available documentation.
Also check folder \DCS\mods\tech for any documentation on non-aircraft DLCs such as the supercarrier.

Generally each important folder contains "doc" subfolder. In the installation root folder is "doc" subfolder which contains GUI and mission editor manual and some usefull charts.

You can also find all manuals in the ED's website: https://www.digitalcombatsimulator.com/en/downloads/documentation/

Addons made by Heatblur have life version manual:
https://www.heatblur.se/F-14Manual/

https://f4.manuals.heatblur.se/

In the F-4E the manual is available directly in game by using mouse and keyboard combo you can open manual exactly on page of desired avionic part you clicked on.

Like other said you can find them in your game folder,

I would suggest using Chucks guides though if you're learning an airframe:

Chuck guides are fantastic, like a manual on steroids

Chuck guides are like a manual on reduction died. Those are user friendly, but contain very little info in comparsion with dedicated manual.

They are a good starting point to get the basics and a little knowledge on every part of the air-frame. If you just want to learn how to use the air frame chucks guides are where its at. If you want more information on how everything truly works go to the dedicated manuals

I'm a fan of Chuck's Guides btw...

I get the good intention but that practice can leave bad habits of forgetting about the main manual just because things apear to be running okay.

There are a few details on the main manuals, especially for targeting pods and other dedicated avionics that just revolutionizes the workflow that is absent from chucks guide. A fast read over it can grab your attention and you can retain the info from the get go, and that oportunity is lost when you reference a condensed guide and go straight into the comfort zone.

Startup, basic aircraft controls functions -> Chuck's Guide
Navigation, IFF, A-A, A-G, weapon programming -> Main manual.
