I actually did so with my G940's throttle since the left throttle grip has no functions in it.
Yes this is a desktop HOTAS setup I'm on. No chair or fancy mounts. That being said why would you speak so highly of Virpil then suggest I consider the only other real option/competitor? I don't think the tm hog is really in this race anymore is it? And aside from virpil and Winwing there isn't much else afaik.
I'd seriously consider the latest WinWing throttle and their latest stick F-16EX, which replicates but improves upon the Thrustmaster (real world Warthog+) stick.
I currently use a mix of Virpil and VKB. I don't believe VKB has their jet fighter throttle for sale yet. While I do love my current Virpil kit, it isn't perfect. WinWings latest offerings appear to attempt to address many of the issues raised by Thrustmaster, Virpil and VKB users. Such as removable mini stick, desk top usable size, and ergonomic designs for human, but not giant human hands. I have no relationship with any brand other than spending way more money than I planned to switch from plastic junk to durable metal products that don't self destruct after about two years.
If you had to buy a new throttle today would you buy another virpil CM3 or go Winwing Orion 2?
I'm not sure myself. I'd be reading lots of candid customer reviews as well as any detailed comparisons that are available. On the good side, I think that if you went with either, you'd have a solid product with years of enjoyment.
Same with sticks... I think if you got that latest from Virpil, VKB or WinWing, you'd have a great stick. With sticks though, you do need to consider models with care for desk top height, hand fit and ability to swap cams for eg. soft with no center detent for helicopters and space flight.
It is a hard choice, because you want to buy this once and last for many years.
One personal factor for me is that I want to use my one desk for work and play, so devices I can grab for a quick flight in the evening and push aside when not in use is important to me. Those VKB pedals are a perfect example of a product that does not get in the way or can easily be pushed aside while using an office chair. I don't have space or time to mount and dismount desk attachments.
Well I've already got the VKB Gladiator NXT stick and VKB pedals. Just wanting to upgrade the throttle. I'll just go Virpil and be done with it, hah.
Or just go Gladiator NXT EVO Omni Throttle, thats what i'm running with the Gladiator NXT EVO ‘Space Combat Edition’ w/ SCG Premium Right grip, works great and is really nice incase you'll ever consider spacesim :)
No, no. You should buy the Winwing super taurus throttle. Its plus side is that if anyone breaks into your home you can bludgeon them with it as it weighs something like 30lbs and is the size of a small fridge.

Since you move a throttle handle back and forth, added weight (at least in the context of a consumer flight sim throttle form factor) won't really help. Even the very heavy Warthog throttle needs to be secured (museum putty actually works great for this if you don't want to screw it down).
To be blunt. Winwing's stuff is good but they have had some quality control issues and even some design issues that have kept them from hitting the same standard you will get with a Virpil throttle. At the moment, Virpil's throttle is technically the best in terms of overall build-quality, versatility, and even on a software configuration level (since Virpil's software is quite powerful and lets you do a lot of really interesting things).
Winwing is good, don't get me wrong. One could certainly do a lot worse. That said. A Virpil throttle is something you can buy with the knowledge that you will not likely ever feel the need to upgrade. It pretty much does everything you might want a throttle to do because it doesn't burden itself with being a replica.
