Choosing between Su-27 or Su-33 is up to your preference.
If you want to fly faster, you have to go higher. Mind the IAS is not the TAS.
I don't recommend you to fly long time at afterburner or even 100% without afterburner. MiG-29 drinks fuel very fast. So when you back to your airfield it is better to fly high and set throttle on 85% - 90%. There is a counter above the fuel level indicator that shows how much kilometers you can fly with the current fuel level and setted throttle level. By reducing the throttle you can see that amount of kilometers is raising.
As for choosing between the F-15C, SU-27, or SU-33.
SU-33 and SU-27 are almost the same plane. SU-33 is a modified version of SU-27. SU-33 can land on the carrier, SU-27 can't. They both using the same missiles and the missiles are for mid range attacks. Their missiles have semi-active radar guidance, so you need to keep enemy airplane locked with your radar until missile hit.
It is not an easy task, especially when you try to fight F-15C armed with AIM-120C missiles. It is possible to hit it, but it is very hard and you will not be able to do it from the first try. You need to learn anti-missile manuvers to avoid enemy missiles first. By the way, it is easier to shoot down F-15C with MiG-29S then with SU-27 or SU-33, because MiG-29S and MiG29A are much more dynamically airplanes. They can get high speed much faster, it helps to shake enemy missiles. Additionally, MiG-29S have R-77 missiles with active radar guidance, that can be shot and forget.
F-15C is much easier to fly, it have AIM-120C missiles that gives a huge advantage over russian airplanes. The only thing that is not reccomended, is getting close to your enemies, because russian missiles are very good at medium and short ranges. Additionally russian airplanes are good at dogfights.
By the way, you don't must to choose between these airplanes. You can just buy the "Flaming cliffs 3" DLC and get all of them. The "Flaming cliffs 3" DLC contains A-10A, F-15C, MiG-29A, MiG-29S, SU-25 (It is not SU-25T, it is a pure SU-25, the earliest version of airplane), SU-27, SU-33.

Yeah I think the F15 might give me the biggest change up in what im doing. But I would like the carrier landing of the SU-33. Tbh I was very unsure about the game and just bought the Mig29 to test. Thats why I prob will just buy one more cheap plane as I dont want to spend 50 quid on the whole pack when I can upgrade to a full fidelity plane in the future.
My only concern is that the F-15c has no tutorial missions to learn to fly it? The SU33 does have carrier training missions from what ive heard and should be similar to the Mig 29?
Plus ive only scratched the surface of what the SU25T and Mig 29 can do....so ive hundreds of hours ahead of me. One more plane might just be a nice mix up every now and then :)

If you want to try a takeoff/landings, you can create your own mission in mission editor. The same for training of fighting enemies. It is not so complicated to creae such a simple mission. You need to set your airplane on the map, set it to "player", then set enemy and choose it's level. For takeoff/landing, you can set your airplane on airfield's parking. Then you can set it to start cold on the ground. You can also set it start in the air. You can choose weapons for yourself and your enemy. You can set only a gun for example and try dogfight.
So after reading manuals of F-15C, you can create a simple mission to try what you just learned. Anyway, it's up to you what to buy. I like Russian airplanes for example. F-15C is very good, but I enjoy more flying MiG-29S or SU-33. I even like SU-25 and SU-25T. A lot of people don't like these two, but I enjoyed a lot the campaigns for them.
By the way, there is a MiG-21 BIS DLC. It is a high fidelity Russian jet. Also there is a KA-50 (Black shark 2) DLC. It is a high fidelity Russian attack helicopter, and Mi-8 DLC is a high fidelity Russian cargo helicopter.
You can learn any FC3 planes quickily from their manual, for F-15 I remeber there where a couple of good tutorials here on steam (made by users). Don't have the link anymore but I guess you can search for them.
Also, if you opt for the F-15C consider buying "The Georgian War" and "Red Flags" campaingns.

I even ordered a Thrustmaster 16000m HOTAS so that will improve my experience :)
Oh wow cool, I wasnt even aware of the manuals or the fact I could create a simple training mission. Before playing the game I would of ignored the Russian jets totally but now im hooked and really enjoy flying them (apart from the radar beep which i turn down :P).
The Mig 29 is a beast and id love to see them model the Mig 31 at some stage.
I am drawn back towards American jets but its gonna be very close between the SU33 and F15c. Are the SU33 missions fun from a carrier?

Oh, by the way. SU-33 have a very good autopilot. It can fly on the path between waypoints and it can even almost land the airplane. The autopilot disengages on the height of 50 meters, if I remember it right. So it can aproach the runway almost till the landing. F-15C don't have these features. But F-15C is much easier in weapon using and flying.
By the way, F-16C is in early development stages, so currently it is better to buy F/A-18C or F-14B. Both F/A-18C and F-14B have an ability to operate from the carrier.
Just choose the airplane that you like the most, so it will be interesting for you to learn it and flight it. Everyone prefer something else. For example there is a lot of people that likes a World war II airplanes, but I'm not a big fan of these planes. I like the modern ones.
The autopilot also sounds useful....the Mig 29 is a tad wild on the handling and landing side :P Sometimes I land haha
Im still tempted by both the F-15c and SU33! im ruling out the SU27 as possiblt to similar to what I have in the Mig 29

You know that Flaming Cliffs 3 includes all the aircraft you listed, right?
You're paying twice as much for each FC3 aircraft when you buy them separately, just saying.
Also, FC3 includes the J-11a, which is a Chinese flanker with fox3 capability and additional racks.
As for the F-15C, it's arguably the best FC3 aircraft and still one of the best fighters in DCS World (despite not having DL).
As for training missions, they are irrelevant, since you can either download training missions from DCS User Files or create your own using Mission Editor.
I found the SU-33 has less speed and less fuel and defences. These planes are vulnerable at sea so makes no sense!
The MIG-29 can tarhet 2 planes at once and shoot both same time by TWS2.
You only need TWS to target nearest if you have wings onto you. Else it doesn't use the Launch Override and can get you shot at first.
The US planes fly like arcade except the F-14.
If you mean the F-15C, try to disable it's compensation system. If I remember it right it's "LALT+1", "LALT+2" and "LALT+3". This system is a kind of passive autopilot, it compensates pitch, roll and yav. This is why F-15C fly so straight. If you disable these systems it will fly like any Russian jet or A-10A / A-10C that doesn't have such a system and need to be trimmed all the time.
By the way. If you press the "S" button while flying SU-33, it will turn off the "fly by wire" system, then you can do a cobra manuver, but you need to manage the speed and the angle, otherwise you can tear off the wings. So SU-33 also have compensation system but it works differently than F-15C's system.
