While I have heard good things about Winwing overall, Virpil has a stronger track record in regards to quality so Virpil will probably be the safer long-term bet.

Rudder Pedals?
Honestly? I know that many will say that rudder pedals are not essential but there is a certain point where it just makes sense to have them.
In most cases, I tend to suggest the CH Pro Pedals as a good "starter set" because they are pretty much the most reliable pedals you are going to get in the entry level price category. They are not amazing and I certainly wouldn't try to sell them as anything more than entry level pedals but compared to other sub $300 pedals, they are pretty much the only logical choice.
Beyond that. I would say that the MFG Crosswinds are the most practical. They are not exactly cheap but unlike pretty much every other rudder pedal set, they are built to be user-serviceable. You can order individual parts if you ever need to replace something and it is all put together incredibly well. They are also easy to customize with different parts/pedal styles.
Rudder pedals are one of those things that people don't think is very important until they actually use them and realize how much it improves the base-line gameplay experience. The level of precision you get simply can't be rivaled (on a basic technical level) by twist sticks or other methods. Likewise. The ergonomics of pedals is VASTLY better than a twist stick.

Personally I have MFG crosswind V2 with ME262 footrests. Not bad, just those footrests are not the best ones. Now they produce much more variants which is good. MFG uses big ball bearings everywhere. Those are not cheap, but very reliable. Those were the very first cam centerening based rudder pedals in the market. Also probably the first controller with cam centerening mechanism ever.
