If you ask me the flight sim market is the completely opposite of overly saturated, we need more money and devs doing this kind of thing instead of CoD-style shooters!!!
But in many western countries developers are often scooped up quickly by some companies which necessarily aren't into flight simulation development.. Or simply finding funding for what is considered 'niche' market may be overly difficult.

Maybe its just because study sims like DCS are too much of a "niche" thing in the EU and western Countries, compared to the mainstream Flightsims.
X-plane is developed by Laminar Research and FSX was developed by Microsoft - both US companies. There is also Prepar3d by Lookheed Martin that also comes from USA. At least X-plane and p3d can be considered to be hardcore in terms of actual simulation. But you are right about that Aerosoft develops addons for flight sims. There are also companies like Carenado based in Chile that also makes addons...
I have played computer games since the 80's and I have been monitoring the gaming scene for more than a decade (I run a swedish gaming community and I used to write game reviews etc. I was also a Microsoft MVP for the Xbox platform etc, etc) and there are changes in the market happening. We see a lot of interesting titles coming from the former 'Eastern Block' and not only flight sims. I think a large portion of the audience is dead tired of the AAA titles being released with sequels to the sequels. Perhaps the russian audience got tired first of playing games with heavy focus on everything american?
Now we find games and sims from Eagle Dynamics, 777, Warhorse Studios (not russian but Czech) and titles like 9th Company, Spintires and DCS. I hope this trend continues!
Still, always interesting to see how deep some ppl dig when there´s time.
