You can use the create fast mission option, you can download users missions also you dont have to use the mission editor if you do not want to.

The mission editor is a steep learning curve but that is because it has so many options for making scenarios.

it can create cool missions
I have very basic understanding og the editor and stay away from all but the simplest triggers. But it's just putting down units and giving them some simple orders.
But I fully agree some aircraft, like the F-16C, have a strong lacking of missions but mostly of campaigns . By now there should be more than Red Flag for the F-16C.
I believe they will come in the future, but none will be free as part of the DLC, like in the SU-25T (the best campaign in DCSW).
The other problem I see in DCSW is the lack of modern maps (sorry, I don´t play yet WWII). They are being released very slowly.
There is a lot of focusing in the airplane cockpit, but the game (sim) is deficient a lot in the most important aspects of a combat flight simulator, which are fighting and peace operations single missions.
By looking at the insufficient AI design and performance, you can deduct DCSW is an MP oriented game with very low value for single missions.
P.S. If you forget all this above, don´t mistake me. DCSW is a great combat flight sim.
This sums it up nicely. The mission editor is very easy to use for simple scenarios that the OP is describing.
OP is also contradicting himself. He says the mission editor is too complicated to get into because it has so many features, but he also wants it to have more options and features.
More options and features = more complicated.
Heck. One of the things I have found over the years is that the more realistic the mission, the less complex it often is to make.
Learning the editor in DCS is hardly a serious hardship. There are plenty of solid, easy to understand videos on Youtube that will explain the basics in the time it takes to watch a episode of a television program. It isn't a big commitment and isn't a serious hardship.
might try DCS Liberatioin dynamic campaign too. ( version4.1.. vers 5 has lots of bugs and isn't as good)
The only issue is that you need to leave the game to create missions everytime but it's much better than manually making everything.
