When you start the DCS go to Encyclopedia and you get all the Info you need on everything in DCS.

The C has smaller fins compared to the B-Variant to be carried in interior bays like for example in the F-22.
Also the C-Variants have gotten several upgrades over the years, although i don´t remember which Version of the C we got in DCS. Details can be found in the encyclopedia i guess.

The most noticeable difference you'll see in game is that the C has more legs.

The C-variant has longer range. The B-variant supposedly has slightly better maneuverability (the larger fins allow for more force applied in changing direction). However, speed also affects maneuverability and the C-variant is going to maintain its speed longer to reach those ranges, so who can guess where in the engagement envelope the B might have better probability-of-kill than the C?

I say carry C's if you have access to them (some missions could have payload restrictions).
