In your case, for now you can buy one of the planes with simplified avionics, like F-15C or some of the Russian planes like MiG-29 or SU-27/SU-33. They are not as expencive as full modeled, but their flight model still as realistic as a full modeled. And at least you will have some fighters to fly over purchased map in online mode.
Additional thing you can do, is to buy the "Flaming Cliffs 3" DLC that contains "A-10A, F-15C, MiG-29A, MiG29S, MiG-29G, SU-25 (not the free one SU-25T), SU-27, SU-33 and J-11A", so you will get all the simplified avionics jets in one package. Then you can look for mods on the DCS site. There is a lot of mods of different jets, even europen I think, but most of the mods requires "Flaming Cliffs 3". Some mods though requires one of the full modeled planes, so it is better to find the mod firstly, then check which plane you need for it, buy this plane and install the mod. I'm not sure if the mod will work in online, but at least you can create some missions with mission editor and fly european plane. In online you can always fly one of the "Flaming Cliffs 3" package.
And for the future. You can always buy addtionall planes and maps when they are on sale.
There's no modern British aircraft available in DCS at the moment.
You'll have to make do with US aircraft for now (AV-8B included), which can also be flown under UK.
The Eurofighter just started development, it'll take years before it's ready.
And yes, "wow these prices".
I'd wait for the next sale (and do research + ask around, before buying more modules)
Also, don't make the mistake of buying Flaming Cliffs 3 aircraft separately, if you're interested in any of them, buy Flaming Cliffs 3 directly.

Can you please elaborate it a little more?
I can assume that you turned on the year limitation function, it is a little clock sign on the bottom panel. You can turn it on and then set limit like 1940 - 1942, so you will be able to use only the airplanes and ground units that were produced in this period and as a result, create more realistic missions. Just turn it off if it is on.
Once released, the Eurofighter will be the most modern plane in dcs.. and it was designed in the 80s...
