Custom cockpits?
I saw this in the options and would like to know exactly how I can make one myself / what tools I need.

You can unpack them and edit texture via PS as you want.
For 3D model is bit complicated.

Do you repack the edited archive? Or do you place the edited file in some other directory?

for anyone coming from google this method is outdated, you should now only use the DCS saved games folder for installing mods.
this way they wont be deleted on update or fail integrity check for multiplayer

C:\Users\%username%\Saved Games\DCS.openbeta\Liveries\Cockpit_Su-25T

or Saved Games\DCS if your on Steam
