F16 is a bit younger and will fullfill all roles more than respectably. It is a fantastic SEAD and is still in use today in some countries. They said it will be mostly ready by the end of 2020.
JF-17 has received many good comments. It has everything a modern multirole should have and in a 2010+ glass cockpit with up to date weaponry.
My favorite is the F18 because of the Carrier capability and the fact that 4 maps out of 5 have huge waters on it. It nakes mission scenarios easier to imagine.
But the M2000 has a special place in my heart as it was my first module!
Don't get me wrong. I love the Mirage. I just think that the JF-17 is kinda ideal for a newer player because it doesn't really compromise in any one area (air to air or air to ground) while still being pretty user-friendly. It doesn't really take a lot to learn how to work the various systems and weapons.
The F-16 is still VERY incomplete and I can't really recommend it at this juncture. It will get better but I would wait until it is further along in its early access before plunking down money for it.
The F-16C is a plane I haven't seen much of, or own myself for that matter, but I DO know that it is going to be a very capable plane when it's finished, but right now you just don't get much bang for your buck, especially when it costs the same as the Hornet.
About the Mirage though, you should definitely get it once you have a proper multi-role, it's a great fighter for when you need just that, but it only carries a maximum of 4 A2A weapons (Magic IIs Fox-2s and Super-530Ds Fox-1s) which means you can't really stay in combat for very long.
Before I finish, I talked about the Hornet a lot, you might be interested in that plane if you are looking for something you can bring to absolutely any situation and still excell. My gripe with it is that the MFD / bottom screen is way too low and a lot of the systems are pretty finnicky and complex. I still love the aircraft, of course, I just don't think I'd recommend it if you aren't 100% willing to stick with it for a few weeks and learn everything.
Just google "Chuck's guide JF-17" and you will find the best reference available for that module right now. It will certainly be more than enough to get you started.
Jf17 has some very convenient systems and the cockpit is neatly laid out and labeled in English. Navigation is a breeze once you learn how to play with way points which is incredibly simple and convenient in the jf17. The HSD is a godsend. It shows everything SA including data link in one place. As someone mentioned above: weapons galore. Can carry a lot of variety compared to mirage and 4 fox3s compared to mirage's 2 fox1s. SD10s are almost sure kills within no escape zone. Ld10 are harm equivalents. Very nice. Maverick equivalents. JSOW and JDAM equivalents and then some. The SPJ pod is almost cheating when it comes to dodging fox3s. Just remember to turn it on. CM802AKGs let you target ground a 100nm away. BRM1s let you lay waste to whole airbases in one sortie if no anti air opposition.
The one part which you may struggle with is binding all the hotas controls and remember what and where everything is. This is the most complicated thing about the 17 AFAIK of you don't have an expensive hotas with a multi way switch at every finger but it's getting easier for me with time flown. A few bugs here and there that you need to be aware of. E.g. If you enter dogfight DGFT mode the only way I know to leave is to hit the switch to directly go to a specific master mode like NAV, INTC or A/G. Pressing the next or prev master mode switch does nothing. Rwr in multiplayer is iffy atm so you'll be struggling to kill 6 enemy planes every sortie *wink*.
