Did you mean, looking slightly lower? by default, DCS set a view angle in between gauges and HUDs (a negtive vAngle), so regular player can see both of them in same screen w/o adjustment.

Or you accidentally saved a custom view to the default.
if you have problem with 1:
you can manually edit C:\users\<user name>\saved game\DCS\Config\View\snapview.lua, under <aircraftname> the no.6 entry (comment as "snap view 5") , set the v vAngle to 0.0, the default center view will become completely straight.
if you have problem with 2:
Just delete the file i mentioned above it will "reset" all view to default.
PS. Fix path typo "C:\users\<user name>\saved game\DCS\Config\View\snapview.lua" hope you did not go to "wrong" folder
Please, send us the screenshot because without that is IMO impossible to understand your problem. Defaultly all views are just a bit tilted down to be able to see gauges and HUD at the same time. It is intentionaly because the low FOV caused by display dimensions. For VR players the default view is straight foward, just like IRL.

As I had no views saved as such, I just defaulted the file in question, snapview.lua.
To do this, go to the main install (not the saved games directory) >> \DCSWorld\config\View\ and copy the file sitting in there called "SnapViewsDefault.lua" -
Now paste that file into C:\users\<user name>\saved game\DCS\Config\View\
Finally delete "snapview.lua" and then rename the pasted file, "SnapViewsDefault.lua" to "snapview.lua". Voila!
So, what you can do is move your head/TrackIR to the position you want, and press that to save the default centre position.
For real-precision, you can pause the TrackIR, then use the "RCtl Rshft Numpad" combinations suggested by @Raymo, and use the "LAlt C" to change the first direction. Then save that position with RAlt Num0 and then unpause your TrackIR. The next time you centre your TrackIR it should snap to that position.
