You can play the game in windowed mode.
- Configure it to not scale and leave black borders instead (scaling is a bad idea anyway as it distorts proportions).
- Configure to scale using video card instead of your monitor (any decent card should do the job).
Hmm... Screen resolution is in the game's options screen. Are you sure you've moved the slider all the way to the right?1. Go to your steam library
2. Right click on FLY'N and go to properties
3. Under the general tab it should have a "set launch options" button
4. type the following
-w [width] -h [height]
Edit:
For a full list of launch options reference here:

My screen is of course showing black borders at the top and bottom, since the game displays itself in 16:9 on an 16:10 screen/16:10 windows resolution. The thing is maybe that it does not scale correctly/at all and subsequently somehow those colour problems are caused. I have the same color distortion effect and blurriness when I use a cheap HDMI cable and set the resolution to 1024x768 and below. To play old games, I have to use a DVI cable for some reason, but in this case even that doesn't change anything.
The slider in the game settings is at the right end. No change.
I have a Radeon 7770 and now I have tried setting the GPU Image Scaling to "Fullscreen" but this also changes nothing, since the Steam overlay is displayed in the correct 1920x1200 resolution. When I set my Windows resolution to 1920x1080, everthing is stretched, unsharp and also distorted with Full Screen Scaling activated.
@ Shiny Umbreon:
I tried "-w <1920> -h <1200>" and "-w [1920] -h [1200]" and "-w 1920 -h 1200" and nothing ever changed. I don't know if I got the syntax wrong still, but my Steam, Windows and everything is still set to 1920x1200, crisp and sharp with good colours and the Game is distorted and blurry with black borders top and bottom.
I have nVidia and it's configured this way:

It works perfectly with old games which don't support high resolutions.
Radeon seems to have a similar options screen:

Have you tried switching image scaling to Maintain Aspect Ratio or Use Centered Timings? Both should result in correctly displayed black bars at the top and the bottom, without any blurriness, when the resolution is set to 1920x1080.
This article has some strange suggestions, like The desktop must be set to a lower non-native resolution. You can try switching resolution to 1920x1080, configuring scaling, then starting the game...
I thank you for your time and your help. Maybe the developers will look into the Steam forums one day and implement a real way to change the aspect ration, I mean how hard can that be.
I do read all topic on the forum ( but not on week end ^^).
We tested the game on every screen configuration ( some part of the team had 16/10 screens). One team member played it on a 4/3 screen.
You won't be able to set the resolution without having black bars on your screen, I is a design constraint.
I have no idea yet why you have such strange colors. Did you check your graphic card drivers? Do you have the problem playing windowed mode (Alt+ enter or select the option in the options)?
