ENDING SPOILERS: How Did The Cops Know Simon Was About To Commit Suicide?
It was never given any explanation as to how the cops knew Simon was about to commit suicide, and the Co-op campaign isn't canon

So there really was no way the cops could've known, unless I missed something

In endings 1-3, the police didn't show up until after he killed himself as well as Dr. Purnell and Sophie (depending on ending), so I assume you are referring to ending 4, which is considered to be the "good" and canon ending. The simplest explanation is that there was a lot of commotion coming from Simon's apartment and someone likely called the police. He might have shot his gun a few times or just been shouting and screaming.
