Get better gear. You should also probably turn your difficulty down

You probably didn't do a good job leveling to improve your attributes. Every level you can get +5 to 3 attributes if you get 10 skillups in skills that are associated with the specific attributes.

The problem is that as you level your enemies level with you. If you don't increase your stats properly, enemies will be stronger than you.

You should try to focus on raising Endurance and Strength by +5 for the next several levels to give your character more Health and to help deal more damage. Try to raise your blade skill by 10 for a few levels to boost your blade skill and damage and to get +5 strength at level up. You may have to use trainers.

At level 8 you should probably have better gear.

Focus on completing the following quests. The first one can be started in Chorrol in the Grey Mare.

Seperated at Birth
Legacy Lost
Sins of the Father

The first two quests can be done fairly quickly. It is important to complete both as fast as possible because you won't get Sins of the Father until 3 days after completing Legacy Lost.

Go do Namira's Daedric quest to receive Namira's RIng. The ring reflects physical and magical damage on your enemies which will decrease the damage they deal to you and reflect it back on them which will increase your damage output.

While you are waiting for the 3 days to pass, go fight some Ring Leader bosses for their enchanted armor. You can usually find a decent cuirass that resists normal weapons and a shield that reflects damage that will stack with Namira's Ring.

After the 3 days pass go to Chorrol and find Fathis Ules to receive SIns of the Father. Once you have the quest go the Red Guard Valley Cave and kill the Chieftain for the Honor Blade of Chorrol.

This is an Ebony Weapon with high durability and damage. It is a quest weapon and is weightless. Do not return the blade to Fathis Ules instead keep it and use it as your primary weapon until you find a better weapon. When you reach level 25 return the sword to Castle Chorrol to receive the Escutcheon of Chorrol.

You can find Ring Leader bosses in the follwoing areas.

Light Armor

Doznot Cave
Sercen
Rockmilk Cave

Heavy Armor

Fort Homestead
Fort Alessia
Fort Cedrian
Fort Woodenhand
Infested Mine

These are the best places to farm money because of Ring Leader bosses will have expensive enchanted armor that you can sell.

Save your game before zoning into each area and if you don't get the armor you want reload your save. Try to get a reflect damage shield and resist normal weapons body.

Sell the armor you don't need to Nilphas Omellian (DLC) in the Market District or Rowley Eardwulf (DLC) of Wawnet Inn for the highest returns since they have more available gold.

Once you have better equipment and the Honorblade of Chorrol you can go to Vindasel and try to kill Umbra for her sword and armor. She can be hard for a first timer though. She is level 50.

Is Conjuration a Minor Skill?

You should start using it more often.

Go buy bound dagger and bound armor spells in Chorrol to start raising the skill. Bound armor can be very useful. It has more defense than the armor available at your level and Bound dagger will be stronger than your steel sword.

Once your skills are high enough being able to summon creatures to come to your aid will be extremely helpful.

this is a horrible suggestion. You don't really NEED better gear at that level, just to have your stats set properly, and turning down the difficulty because YOU messed up is cheating.
As far as suggestions for solving the issue, You should really only have one combat skill as a main, and sneak/stealth you should avoid having as a primary. Basically one combat skill as a major, and avoid putting anything you cant control the level rate of in your main attributes (basically, if it levels without active, intentional use, it shouldnt be a primary), this will allow you to control your level, and thus, how enemies scale with you.
