I usually use the mace of Molag Bal. If you don't use the unofficial oblivion patch the absorb strengh does nothing.

Sacrifice one you never plan to use or display.

Use the console to create one of any Daedric item, so you get to keep all your hard-earned artifacts.

The Wabbajack (Sheogorath) is an option.. its pretty fun to use, but its extra weight in addition to an actual weapon (You cant kill with it, so you need actual gear), so for the most part it would just sit in your home in a chest. Or on display if you take the time.
Otherwise, the Star of Azura is insanely useful. So is the Skeleton key. Dont even think about using those.
The Mask of Clavicus Vile could be sacrificed, you generally dont need personality bonuses.. but then you have already given up Umbra, one of the best weapons in the game.
There is a ring too isn't there, the Ring of Khajiit or something. It has it's uses, and is a good ring, but there are alternatives. Specifically, if you have full 100% cameleon any sneak bonuses (You dont get the perks from boosting the skill with magic! You jsut become harder to detect, which is impossible at 100% cameleon anyway) and invisibility is wasted. I used that to sacrifice in my playthrough.

I chose the Ring of Namira, I think it's called. Easy to get, and while the enchantment combination is rare, others items have the same enchants.
