If I'm stuck I like to either borrow a minor NPC's name from another game (Morrowind especially has tons of named bandits) or mix and match parts of names into something new.
Warning: DO NOT DO THIS ON THE SCREEN WHERE YOU ACTUALLY TYPE YOUR NAME. Do it at some other point in the character creation process, such as immediately *before* you're asked to choose a name. Pressing the "tab" key while typing your name essentially makes the game think the "tab" is another, invisible, letter in your name, so that your character actually becomes (tab)Hero McPerson.
This causes all sorts of fun glitches, like being unable to save.
Since then, I've started a list with different characters and their builds (I felt like playing at some point) whenever one came to mind and wrote down all the basic info. Diminishes the whole proccess of being stonewalled as you put it, when you're in the mood for a new playthrough.
