Use MO2 instead as Mod Organizer 2 creates Virtual Folders (have same folder structure as where game have been installed) which make it possible to set up profiles that can be deleted if needed or create different setup of mods). When you start game MO2 through OBSE (script) will then load all files from Virtual folder instead of using DATA folder in game have been installed.
MO2 work much better then any other mod manager I have used since 2006 and you don't have to worry about installing mods that you later want to remove that suddenly will lack texture files as those might have been overwritten. Virtual files easier to understand as a copy of all files that a mod make use of is stored outside of game DATA folder.
When you hear "overwrite" in MO2 context it doesn't mean overwrite original game files in Oblivion DATA folder, but instead to overwrite files in Virtual folder that have been created as a profile (you will create a Virtual profile the first time you run MO2). I would recommend to use Portable option as it is more flexible then Instanced profiles.
Look up on YT to find guide and explanation how things work.
