Caves are supposed to be dark...

theres an alteration spell for light casting but it's not very bright. just adjust your brightness settings when youre in caves?

Or adjust it from your monitor.

You can easily see inside a cave without a torch, maybe the brightness of your monitor is too low ?
I never used a torch on my first playthrough, and had to install a mod to lower the lightning in the caves to make the torchs efficient, for my current one.

Use your video card settings to adjust your brightness and contrast. Slightly adjusting your gamma will also make everything brighter.

There is a mod that you can download that will make caves brighter, but I have never tried it so I don't know how bright it is. There are a few mods that change the color of nighteye so that it can be customized to turn night into day depending on your choice of color.
The are scrolls and spells for light and night eye. Look at the Bravil Mage's Guild for those Illusion Needs
