modify disposition
To use this command, select the NPC whose disposition you want to modify, then type in the ActorID of the NPC the selected NPC's disposition will be modified toward. To modify an NPC's disposition towards the player (the same value used for the purposes of revealing information), select the player (to get the ActorID), type in his/her ActorID, input the amount you want to add to or subtract from (use "-" when decreasing) the NPC's disposition, select the NPC, and press Enter.

see his refID. to double check cluick on him in the console window and this should give you his ID
In the Skyrim CK you can reset a npc but not here, not directly anyways.
you could try the kill command. because he is essential it won't actually kill him but may reset his AI when resurrecting
or set essential to 0 and then kill, resurrect him immediately, set essential back to 1
see the console page linked for descriptions. his AI may not reset though.
you could even try disable and enable.
of course this is if you really cared to bet with him. I wouldn't worry about it and hopefully nothing else in the game goes wrong because just him messing up doesn't mean a broken game, hopefully.
Of course I do have to ask have you went away for more than 72 hours allowing the cell and him to reset. This should be the very first thing to try in all issues and I usually do not mention it because most people do or should know this, as you probably do.
