If you read the Nehrim documentation carefully, you'll notice that you can easily switch between Oblivion and Nehrim (it's a function of the Nehrim main menu).
What happens is (slightly simplifying) that there exist two game installations in parallel, Oblivion and Nehrim. Only one is active at any moment, the other is "hidden" under a different folder name. When you switch from, say, Oblivion to Nehrim, the Oblivion folder is renamed and the Nehrim folder is renamed Oblivion. When you switch back to Oblivion, the Oblivion folder containing Nehrim is renamed and the previously renamed original Oblivion folder is renamed back to Oblivion. You always launch Oblivion.

"If you want to play Oblivion again: Launch Nehrim on Steam first, a panel opens, here you can choose the 'Run Nehrim <> Oblivion' option. The now launched switcher tool lets you easily switch back and forth between Oblivion and Nehrim."
For those who consider installing fan fiction: All mods I mentioned are so-called "total conversions" of the respective base game, completely new games, developed with the help of the Construction Set of the respective base game, but playing in their own game world, not in Tamriel. Game length comparable with the respective base game. And they are all free.
There are more total conversions, most of them for Morrowind (Sword of The Perithia, Starwind, ...), for Oblivion there is Morroblivion (possibly more I don't know).
But not recommended for players not interested in fan faction. :-)
