The mid game is too grindy
I have to close so many Oblivion gates, and doing the same tower climbs all over again and again. All this spider deadras and deadtroth you have to kill makes it so grindy and not really interessting.

It's for the Quest where you should get the support of all cities for Bruma. Everyone want's to have a gate closed, so they can send some troops.

you dont need to help every city

You don't need ANY support at all. The entire quest is completely optional.

You just get less help in the battle for the final gate, I think.

Correct. It is worth doing as many of the quests (before getting bored) so you can have more soldiers on the battle field.
before Great Gate opens you are going to have to face a few waves of Daedra from 3 gates, the more help you have the quicker the battle goes.

If you are talking about general, rather than the Bruma quest, then closing gates is totally optional. I used to use them as a sort of entertainment when I didn't have time to start a quest but wanted to have a bit of a fight. Doing an Oblivion Gate when you're in the mood is fun.

Other than that the only thing I noticed by not closing them is you're more likely to meet nasties along the roads.

The random gates that pop all over the place are totally optional. They are a great roleplay tool. I was playing a secretive assassin with my base in the mage tower deep in the mountains, and a gate popped just down the road from it. I decided it was a threat and I had to close it.

If you like brewing poisons, there are also a ton of useful reagents in Oblivion.

protip - put on light armor and run past everything. Just level somewhere else if you want it all scales anyways

Using conjuration and destruction can make the gates so much easier. Doesn't fix the problem of visiting the same place but does make it much faster.

Gates became tedious but I do enjoy the Oblivion specific loot, ingredients, and sigil stones. It tends to be pretty easy (and largely passive) to train up athletics and acrobatics though, so by mid game I would just sprint through a lot of the gate, sometimes jump between tower bridges or similar terrain when it was possible to do so but the jumping part is less helpful. Even if you make the jump you can get turned around a bit by skipping sections, though you get used to that eventually as well. Only really slowed down when I saw something I wanted or HAD to engage in combat. Most gates were closed in under 10 minutes (and that's with my hoarding issues).

I hated closing gates but that's what made it so enjoyable with the difference between nice and peaceful towns and settlements and inside Oblivion realms with the demonic red sky and the toughest enemies and most hostile environment in the game. When I used to play without mods I would visit the bare minimum just to get enough shield sigil stones and avoid the rest unless they were part of a quest or close to an area I visited to prevent that unnerving changing of the sky.

They are very useful to make money so if you have the time and a character that can take some damage working your way though an Oblivion realm to the tower can be very lucrative and is level based. Summons and followers can also make closing gates easier. Add the Midas Wings Of An Angel spell and you can enter the gate and fly straight to the Sigil Tower.

Is there a limit to the number of gates you can close?I've seen numbers, but I'm not sure if they refer to the total number or just the number of gates that can be simultaneously open.

Not sure what the max is but there does seem to be one. Gates have set spawn locations they can show up at and they don't come back once closed, so eventually you would end up closing them all if you really wanted.
