Yeah, horses in this game are monster food waiting to happen. (Seriously, even the extra Health boost from Horse Armor doesn't change this.) It also a pain that's it's very tricky to hit a wolf or mountain lion attacking your horse, since the horse is probably in the way.
Really, escorting anything in this game is a pain since the AI makes no effort to cooperate.
One thing a lot of people don't know is that when you Wait it fully heals you, your horse, and any allies or followers. You can't do that with enemies nearby, however, and by "nearby" they mean "anywhere in the same room or area, even if you can't see them from here" apparently.
You can also cast Convalescence on a horse or Allies between fights, but that spell isn't fast enough to help during a fight.
Be careful where you park your horse and escort it carefully. Other than that, I got nothing.
Going all the way with the Dark Brotherhood questline eventually gets you a horse that can't be killed because it's marked as Essential, so there's also that option.
She can take a lot of damage but when she does lose all health she will fall unconscious for a moment and then start making her way to Fort Farragut which you can miss if you're in battle. If you ever lose Shadowmare go to Fort Farragut and she should be waiting faithfully for you outside the fort entrance.
