I like to see the entrance to Sundercliff Watch because when I see that I see money! Lots of it.
As for actual sights, I love standing at the top of the deep ravines of the Strid river near Anvil and watching the other side.
If you include mods, Roads of Cyrodiil in this case, it adds the road from Chorrol to Anvil, which also has some nice views and sights, specially if you use Unique Landscapes.
And finally, for anyone that likes trekking... Trails of Cyrodiil mod is awesome, I personally love the trail from Cheydinhal to Leyawiin, it's a long road that goes up to the mountains and at the end crosses through the swamps.
With Unique Landscapes installed the Strid River from Skyngrad towards Faregyl is a nice trek too.
He only stops when there's a bandit in his path. So to follow him you need to clear his path then try to follow him again and he can idle next to minotaurs or beasts, or follow deer like a sprite. So being able to cast invisibility is a beneficial to avoid neast while attempting to race across the Oblivion map. Also having a detect Life enchantments to see where he is helps.
As far as a unique spot .. dive Rock is great ... and a perfect place to take the Fan

My favorite places to visit in this game are the inns you run into on the road. Away from all the major towns and cities. Seeing the fire going and seeing the alien scenery is very calming in a way.
If I lived in a video game, Oblivion would sure be it.
It has a pleasantness to it, like going to a high budget, but still cheesy ren-fair.
The goofy faces, voice acting and spotty AI also gives everything a sense of whimsical madness, which may very well be why Shivering Isles was a thing.
It is just an awesome feeling to exit the sewers and realize how gigantic the world is.
I have fond memories of the Waterfront Shack because it was a safe haven during early stages of the game and the small size made it more cozy with a chunk of beef and loaf of bread in front of the fireplace. When I have vast wealth and Rosethorn Hall is filled with expensive artefacts and gems I still remember my humble beginnings at the Waterfront.
