I have so much trash in my inventory that it becomes a chore to do quests cause I'm always over-encumbered. That, or I run out of arrows. It takes 30 arrows to kill something if you are "discovered", and don't get me started on the wraiths and ghostly things in dungeons - they only take "decaf" (magic arrows), which you also have to carry, or you have to carry an enchanted bow. But the enchanted bow has charge, so you have to carry a normal bow and a soul gem to recharge the magicky bow. And then, don't forget - you have to have the sneaky armor, then the talky armor in case you want to pass a speech test, but you also have to have a glass armor, since you don't want to fight in your Dark Brotherhood tissue paper if you suddenly run out of arrows and that Ork sporting a heavy armor finally sees you in a small corridor with no escape route. But don't forget - you have to carry a sword (cause daggers are useless) to fight said Ork. Then there are a gajillion potions and ingredients which you have to allocate space for, otherwise you can't make uber-cool stuff to keep yourself going and to poison your arrows when the time comes to destroy your enemy (and it's one big bottle for a single arrow). And then finally you manage to smite that ork, and you discover he has uber-expensive and cool armor and sword, but you can has only one of them because of the weight you carry, and the whole dungeon is filled with people with uber-cool stuff, so you end up clearing it 5 times because you have to go back to your hideout and stash all the tons of sh*t you've torn off corpses of other people... AAARGGHH!!

truth is that you can play oblivion in 2 main ways. that is, with power leveling and without power leveling. with power leveling you must plan far ahead and raise atributes on every level up with 4-5 points. without power leveling you need to lower difficulty a little every now and then, so that you could kill strong enemies with 15 hits instead of 30 (or more?). and less hits mean: less extra arrows, less extra potions/stuff for potions, less need for serious repairs, daggers are more useful, and so on...

but no matter what way you play, you'll have to leave a lot of stuff behind you very often. you either play as an ultimate looter/scavenger, or learn to pick only very important stuff. sounds like a moral suggesting not to attach to virtual goodies? maybe, could be...

When I first started the current game I'm playing now back in 2011 I installed the Knights Of The Nine extra plugins for the first time and I would clear out Sundercliff Watch at least once every level which is the largest dungeon I've seen and is added by the Mehrunes' Razor add-on. With about 30-40 enemy NPCs in there I was constantly going backwards and forwards when my inventory started getting full. Eventually I decided to use a mod to make life easier which some might see it as cheating so it's your own preference but there are a lot of mods that give you a way of storing vast amounts of items without increasing your weight.

Bag Of Holding mod is small and easy to install and obtain that I always found very relieable but I stopped using that in favour of Midas' Chest which is obtained from the Midas Magic Spells
Of Aurum and did the same thing but was a spell instead of something I needed to have in my inventory. There is also Midas' Steed spell which summons a ridable, hard as nails steed that can also be used as a storage container.

If you don't want mods to help carry items but you play with followers you can just reverse pickpocket items on to them.

I installed a mod that makes bows do 4 times as much damage as before.
It is a bit overkill in stealth, but it feels great to not have to transform a human into a hedgehog to kill him.
No mods, no masters
