but no matter what way you play, you'll have to leave a lot of stuff behind you very often. you either play as an ultimate looter/scavenger, or learn to pick only very important stuff. sounds like a moral suggesting not to attach to virtual goodies? maybe, could be...
Bag Of Holding mod is small and easy to install and obtain that I always found very relieable but I stopped using that in favour of Midas' Chest which is obtained from the Midas Magic Spells
Of Aurum and did the same thing but was a spell instead of something I needed to have in my inventory. There is also Midas' Steed spell which summons a ridable, hard as nails steed that can also be used as a storage container.
If you don't want mods to help carry items but you play with followers you can just reverse pickpocket items on to them.
It is a bit overkill in stealth, but it feels great to not have to transform a human into a hedgehog to kill him.
