you need BOSS for load order, Oblivion mod manager for some stuff and wrye bash to merge them so they play nice ly with each other
they also have a bruma mod which expands into skyrim, elswyr, and i think there might be a morrowwind....google it
Bigger towns? "Better cities" is probably the best for that, but it can be quite intensive on lower end PC's
"Portable Campsite" is a mod already.
"Basic Primary Needs" is another mod for hunger, thirst, sleep and hygiene (I do not recall temperature being a factor)
More monsters? If I recall there are mods for this but I can't remember the name.
New lands? Midas Magic adds some. Also there's a Knights of The Nine mod that adds a new land but I can't seem to remember the name.
You can also get Morroblivion for new lands.
To load order them, you'll want Wyre Bash, OBMM and others.
