I think I just messed up the "Origins of the Gray Prince" quest.
So lets just say I was just walking around the countryside when I saw this fort called Crowhaven, and I go into it. And when I get to the end of it, I find a locked door. And since I didn't have the key for the door, my curiosity got the best of me and I cheated my way in, and when I got in it was an empty room with a journal on a desk. I read the journal and when I take it I get a new quest called "Origins of the Gray Prince". I hadn't done the Arena yet so I don't recognize the name. It tells me to go tell the dude about his origin so I go to the arena and talk to the Gray Prince but when I talk to him, nothing shows up in the dialogue menu. Just nothing, not even rumors, just blank nothing.

Should I just load back to my save before I read the journal or do I just complete the Arena quest line?

Normally he wouldn't send you after that thing until near the end of the Arena questline. It's possible that starting it would restore his regular dialogue, but I'm not so sure that you'll ever see the option to talk to him about the journal.

You don't have to do so in order to complete the Arena, though (and since doing so involves killing all the other participants anyway, you certainly can't do it after!). If it's been more than a few hours since you read that book, then if I were you I'd gamble towards continuing.

You don't need to start the area questline, just go up and talk to him. In the case of the OP, I would just reload, or don't worry about it at all since all you get is some basic training.

I always thought he was easier to fight too, but maybe that’s just me...

The above are true

but the gray prince quest is honestly just character filler and you can easily go around the arena and not do it.
