You can open your Oblivion.ini (the one in your Documents\My Games\Oblivion) and check if the correct fonts are configured there:
For me, for the selections I've chosen myself, these are the fonts I have on my INI:
But if you've chosen different ones, just check to be sure taht the default ones aren't there still.
If on Windows 10, it could be the damned documents protection feature interfering with the INI edits... not sure, as I don't have W10 myself.
this is what I found inside the folder https://imgur.com/a/M2OJicN
they dont seem to be default but I'm also not sure if I ♥♥♥♥♥♥ it up and added multiple fonts somehow. I uninstalled the contents each time when I would test it out. Anything you can get from this? cause I'm totally lost anything I should do like just choose default texts when installing dark ui and then manually check and make sure the fonts are default too?
That Oblivion_default.ini is just a "default" state that the launcher uses to generate default values if the user's INI is not present... it's better not to touch it.
Check your User's profile, i.e. C:\Users\<your user>\My Documents\My Games\Oblivion
There should be an Oblivion.INI there.
please tell me this is it & what I can do to fix it/what I should and shouldn't touch
regarding the wizard bain installer thing and the ini file itself
You can try with Wrye Bash again, if you open it and go to the INI Edits tab, then make sure you have the Oblivion.ini selected on the pane of the right, and then look for DarkUId DarN ini tweaks on the pane om the left and try to Apply the ones you have installed... names would depend on the options you've chosen to install of course.
EDIT: Here's what I mean for this part -> https://i.imgur.com/iOizS1d.png
Failing that, you can try to change the fonts in the INI manually yourself... first look into your Oblivion installation, inside the Oblivion\Data\Fonts folder and see if the fonts are present there, and from the ones you see in there, put the names into the different INI values, like I pasted in my other post... problem is, only you know which fonts are present on your installation, you you'll need to see that part for yourself.
EDIT2: Keep in mind that Windows 10 has something that makes files in your profile folders read-only, and you'll have to disable that before you can actually make changes to the INI or before that Windows 10 will actually permit applications to make changes to files in those folders... as I've said, I don't use W10 myself, so I'm not sure how that's work or how to disable it.

Just need some final confirmation on what to do sorry for asking so much I just want to make sure I don't ruin it this is my first time doing fragile stuff like this apologies for being a nuisance
The different icon on the right is due to the fact that one of the tweaks sees that some of the lines already match the existing ones in the INI (the yellow one with a dot indicates that.)
You can select apply for both of them and that would probably solve your issue with the fonts, assuming that Wrye Bash can actually make the change in the INI for reals.
You should also check if the font file is actually present in your Oblivion\Data\Fonts folder too, before blindly applying the tweak, though. A missing font file can make Oblivion crash on load.
If you want to cover your bases, first, make a backup of your Oblivion.ini, before you apply any changes... and in case something fails, just restore that one and try again.
some text is black and for quests that can be bad. all the other menus work right but it also is blacked out in the skills tab but other than that it all seems to be working with no insane glitches and no crashing on loading theres some of the stuff I found in the files you mentioned are there some things I should do to them?
Maybe there are some other option in the installation that lets you control that?
I personally never installed that particular mod you're using, so not sure if there may be another tweak or a different option that would let you chose a more appropriate color for the dark background :(
This is the mod I've always used for installing Darnified Dark UI -> https://www.nexusmods.com/oblivion/mods/11280
((but that one is not BAIN compatible, so I had to personally BAINify it myself :P))
I feel that is the one that contains the files that control the settings, colors, etc. I'd assume you have it installed, but just to be sure :/
EDIT: In any case, glad to be of help and I hope you can solve this last issue! Pretty sure that someone else more knowledgeable in the XML workings of the menus might chime to help too... I never dabbled into the UI modding myself! :)
oh and also while selecting a save game the text with the time date and character name appear to be a very bright goldish color and is also a little hard to read. but yeah 050 prefabs is listed checked
In all honesty, not sure why or how the mod you're using wouldn't already have the correct text color applied by default... it seems to be an actual chore to edit it all by hand :/
