Azura`s Star Soul Problem
Azura`s Star doesn`t get a soul when I kill an enemy who I have casted a spell on it just says "There is no Soul Gem large enough in your inventory to capture this soul" but I thought Azura`s Star would be the equivalent of a Grand Soul Gem if it is is it a bug?

It depends on what kind of 'enemy' you have killed.

Azura's Star can only capture the creatures souls. You need Black Soul Gem to capture any human's soul. 'Humans' include Dremora as well, as they are considered another race of humanoid.

And no. You can't make Black Star like in Skyrim.

In the lore, there are two types of souls: white and black. White souls are those from animals, non-NPC daedra, etc. Black souls are those from any NPC, and Black Soul Gems are the only ones capable of holding these kinds of souls, both lore-wise AND gameplay-wise. Azura's Star doesn't count as a black soul gem, and unlike Skyrim, you can't change that.
