what do I do just try to pickpocket them then go into my inventory and drop stuff into theirs? I'm guessing I would need to have some form of chameleon or invisible on whilst I did this lol?
The Black Robe is weightless. So if you Enchant a Black Robe with Health or fire or shock shield, you can reverse pickpocket it onto someone and they will wear it over their armor if you steal their leg armor from them.
Also another trick you can use to get a limited amount of the enchanted item you made, is to use the the dupe exploit.
If you reverse pickpocket a few dozen arrows onto an NPC, after you are prompted that you can't do it, adding the enchanted robe/item to their inventory right afterwards will duplicate the item up to the amount of arrows you tried to reverse pickpocket onto the npc.
Doing that will save sigil stones. you can dupe dozens of enchanted black robes or other items that way so you have plenty to reverse pickpocket onto NPC's.
