Dark Souls isn't hard. You beat it first time and then you are pretty much a veteran at that point. It doesn't take a genius to play DS2 or DS3 after playing DS3.
Just download a mod that doubles damage for enemies and the player. That way, you die as fast as you would on the hardest, and you kill like you're on easy. It's more fun that way.
This is not completely accurate, Max difficulty bar = Mobs do 6x damage to player. Difficulty bar 75 percent of the way to the right = 3.5x damage to player.

Default difficulty is very good! It will be pretty easy at the beginning and will give you some challenge later on especially if you are not warrior type class. Fire atronachs will tear you apart. Wisps will be a problem as soon as you'll meet them. All other enemies will level up with you and become much stronger foes even at lower difficulty.
