I keep my mods to the minimum, regardless of game. Usually just minor cosmetic changes, tweaks, or bug fixes. I stay away from anything called an overhaul.

In my last playthrough I tried a magicka regeneration mod. In this case it was a regen magic spell that only gave you two magicka back for the price of one, with zero casting XP. Seems minor, but it kept me from being a professional somnambulist. Once you have that spell you can put it on enchants. That really works well having a wizard always fumbling for his amulets and baubles.

What does it do ?
It makes everything abit more like skyrim. Thats not cosmetig, but the scripts changes. The 3rd person is over the right shoulder, you have some more animatiion(people fishing) and a few more changes. If you play the game on english, you should try MGSO, it contains the code patch.
I only have MGSO and then I added a home for myself in Balmora.

I love it. It even got the MGSO texture upgrades inside and out. All the storage in the basement is awesome and I don't have to worry about my stuff getting stolen tags like when I used chests in someone else's house that I had "acquired".

I'm new to modding so those are the only 2 I've tried.
i am also generally a minimalist as well when it comes to games and mods. my reasoning is that if i love a game enough to mod it i generally enjoy playing it enough not to change the gameplay aspect of it. i have played with quite a few mods, the morrowind patch project did a fine job and the code patch if you dont click too many options definitely helps, in various combinations over the years.
i also enjoy the mge, with a caveat; having the draw distance soooooooooo close in the vanilla game adds to the 'mystery' of the game yes, but not being able to see ebonheart from the west edge of the temple (as an example) is kinda lame and to me unrealistic but on the other side of that reasoning standing in vivec and being able to see red mountain and the ghostfence, although fun to play around with and get some good screenshots with, also ruins that realism of the game for me and shrinks the island unnecessarily.
that being said, i have just recently started playing again, but this time with the mgso. it is well done for what it is and really using it for me just boils down to laziness for me. i dont necessarily agree with some of the texture choices in mgso, vivec looks a tad on the gaudy side to me, but i do enjoy and have used most of the 'major' mods included in the package, better bodies/vurts grass+trees etc., and have over the years probably amassed in my own collection somthing close to fliggerty in just texture replacers alone (im sure i exaggerate), but morrowind, as much as i love this game being my favorite elder scrolls, is quite buggy and the mgso does include all of the various patches above and beyond the ones mentioned above, textre/mesh, in a neat install package for me to not think about or mess with, and the other day when i sat down to start going thru all of my amassed texture replacers i realized if i were to go thru and add all of the bits and peices that i like, i might actually get to play sometime this year, so i was lazy and went and got the mgso. im enjoying myself, which is why we buy these games (twice in this case as i still have my pre-steam goty disc) and can recomend it to anyone with a system decent enough to handle it, if i upgraded my video card and got an ssd it would play like butter, but outside of the sometimes random crashes i think it adds more than takes away.
other than that i also added tamriel rebuilt this time just to see what they have done, havent gotten to it yet, but it is communities like that that really shows how great this game is to enspire such a massive project.
i do also plan on trying morrowblivion/skywind sometime as some of that work just looks pretty, my current desktop background is one of the screenshots released from skywind, my only problem there is that im not too sure how some of the stuff will translate, like the propylon indexes, since there is no levitate and it is required to get one of them. not even sure if the add on quest is compatible, but they put the indexes in the vanilla game, the add on just adds the master index and the quests to the individual ones, so that might be a deal breaker for me.
wow.... i tried the "Morrowind Sounds and Graphics Overhaul v3.0" as i linked in the topic.... i gotta say WOW i am impressed... it is highly recommended.

It has a really easy to use self installer, but it takes time as it changes a lot (at times i thought my PC was frozen, but i left it running and it progressed by it self)

I do like how it looks - and its rather easy (if you know to install the mods you are ready to go) to recolour them if you would like it in another way. But here is something else that may suit your taste:

:) I know, it was just a such a strang thing to do.

Anyway, if you want to play it safe while using mods, so you can roll back if you dont like a mod, you should really use Nexus mod manager or Wrye mash. I do use Nexus mod manger of an old habit and it has worked well for me during the years. Some tweaking needs to be done and lets use "Darknut's Armor Textures 1024" for example. Here is what to be done.

a) First manually download Darknut's Armor Textures 1024.
b) Create a folder called "data files".
c) Unzip evertyhing from "Darknut's Armor Textures 1024" into data files. It should look like this for example: "/data files/texture", "/data files/meshes", "datafiles/XXXYYYZZZ.esp/ "/datafiles/XXXYYZZ.bsa"
d) zip/rar the data folder. Name it to Darknut's Armor Textures 1024.rar
e) open up NMM and select "add mode from file"
f) activate the file.
