Block line-of-sight in a partially open door, behind a pillar, cabinet, or even get above the NPCs vision cone (e.g., above and behind their head). Add: I forgot to say, repositoin NPC's facing so object is not in their vision cone.
Telekenisis is invaluable. So are spells to relocate NPCs, like Command (add: Useful when objects and NPCs seem scripted for an alarm).
Stack buffs for governing attribute, skill, and don't forget luck.
Casting can draw unwanted attention at times. Lights instead of Night Eye should be a problem too, but I've been using a 20% light enchantment without noticing a problem (perhaps stats are high enough to compensate?).
Broken mechanics? Pickpocket is capped without a fan-patch at roughly 50(?)%. In general, all the other breakage is in the player's favor.
in my experience, they don't seem to notice you take anything if you are sneaking right behind them or at a small distance. I was in an Imperial fort and i stole a pair of greaves off a table from an orc woman. that was mere feet from me and a guard standing nearby as well. the orc woman was sort of blocking the los of the guard, and the Steal icon wasn't even showing. and i was in no way built as a thief character. i was just a wizard that liked to steal ♥♥♥♥. so my stealth skills were in no way developed. I robbed that place blind lol. made a tidy profit as well. :)
