Could also be caused by a mod or by incompatible mods.
If you're using the vanilla engine with Morrowind Graphics Extender and Morrowind Script Extender, the mod Expeditious Exit was specifically created to fix that problem.
"This mod is for people who seem to have issues crashing or losing mouse control on exit. By hijacking the exit buttons, this mod will force the game to exit."

It's true that Morrowind has had crash problems since it was originally released. Meanwhile a number of causes have been fixed, others are well-known and can be avoided (see my post above for examples). As far as I'm concerned, I haven't encountered any such crash in at least 10 years, except when I accidentally did something which I know I shouldn't do (like alt-tabbing). And I don't use MGE and MWSE (except MWSE occasionally and rarely when I play a mod requiring it).
It would be interesting to learn if the OP has managed to fix the problem meanwhile. If not, it's his decision to follow your advice (especially when he's using MGE and MWSE already) or not. But I'd try a more "conservative" method first - not least because MGE and MWSE (I don't know the Expeditious Exit mod) may cause other problems, especially for inexperienced users.
To illustrate my point, I quote from the description of Expeditious Exit:
"This mod requires Morrowind Graphic Extender (MGE-XE) version 0.10.0 or later. Older versions will not work with MWSE 2.0+! Additionally, it will require the latest nightly build of MWSE 2.1." (I know that the MGE installer contains MWSE 2.1, but not necessarily the "latest nightly build").
Moreover, MWSE requires MCP (which I recommend to install independantly of this discussion - may even fix this thread's crash?) and MCP Skunk Works.
I think this will prevent the soul trap exploit from working
