My basic mod list today:
Familiar faces - slight improvement of head meshes while sticking to vanilla style.
VSBR - vanilla like seamless bodies.
Morrowind Enhanced Textures - all textures in the game upscaled with AI.
Patch for Purists - general bugfixing without adding unnecessary stuff.
Quest Voice Greetings (and similar mods) - adds a ton of voiced lines to the game, npcs will comment on quests etc. It's great.
Animated Morrowind Merged (there is a separate openmw version if you want one) - adds animated npcs to make Morrowind more lively place. I don't play without it.
Welcome Home - a collection of hideouts and small player houses in most cities and outside, you can buy them for a modest price.
Main Quest Enhancers - atmospheric mod that makes main quest progression change the world around you.
LGNPC\LBNPC + nerevarine, bloodmoon and tribunal side mods. Gives npcs in the world character and unique replies when you ask them about different topics. Plus new lore friendly quests.
Graphic herbalism - plants are not containers anymore, but function like plants you can havest by clicking on them.
Animated containers - when you interract with containers they are now animated.
Morrowind Anticheese and For the Right Price - economic balance and exploit fixing.
One of a Kind - removes almost all daedric weapons and armor and you can only get 1 item of each kind in the game. Dremoras don't spawn with daedric weapons anymore.
Weapon Sheathing - visible sheaths and sheathed weapons.
Impact Sounds - sparkle and hit sound for surfaces. Mwse only.
Pincushion - projectiles stick to enemies and walls. Mwse only.
Bleeding Injuries - blood on npcs. Mwse only.
Magic Diversity - better spell visual effects.
Expansion delay - unless you want to get annoyed by assassins from tribunal exp. early in the game.
Ashfall - excellent survival mod, you can cook food by placing it on the grill, make stew. Its very well made and not convoluted. Unfortunately doesn't work for openmw.
Skoomaesthesia - mod by the same author. Adds hallucinogenic effects to skooma and moon sugar. And also not compatible with opemmw due to lua scripting.
There are other great mwse mods, faction and quest mods, but too many to list so i'll let you find them yourself.
I don't advise you to have many quest mods and TR installed together simply because you won't be able to do most of it so no reason to bloat the game that much. 100 hour playthrough can barely scratch modded Morrowind especially if you don't abuse the skill trainers.
