Giving items to a npc
Is there any way or trick I can add an item from my inventory to a npc, without using cheats, of course?

With merchants who buy this type of item you can sell it to them. If it is better than that NPC's default item for that slot - merchant will equip it. Also keep in mind that MCP fixes that behavior which is wrong. One of the fixes which is actually an incorrect fixing. So if you use it - don't apply that particular fix.

Yeah, I noticed that with merchants, but I was wanting to do that with other npcs that aren't merchants.

Beside, I still have a goal of getting a merchant killed by equipping their own merchandise.
Maybe I should work on that haha.

You can use console commands.
I don't know if you consider it cheating. Its not like 'in universe' you cant accomplish what you're trying to do, its not like giving yourself limitless soul gems or something.
What are you trying to do? Outfit a follower with gear? Or is it just for RP reasons?

I thought it would be interesting to mess around with the npcs inventory, either for taking gear out of them, or placing dubious items on their inventories.
In Oblivion, Paralyze allowed messing with a npc inventory freely (or at least manage not equipped items).
I believe the same isn't valid in Morrowind.

Essentially you're looking to pickpocket, a la Oblivion.
Unfortunately, pickpocketing in Morrowind as a mechanic doesnt really work, and I do not believe you can place thing in npc's inventories that way.
I think you'll have to use CCs.
