Otherwise I'd consider temporarily buffing strength (shrines, potions, spells, whatever you can find) so you can carry it all, then store non-essential stuff (e.g. bow & arrows) somewhere you'll remember to come back for it. Daedric stuff is particularly heavy, so another option could be to swap out the warhammer for a more lightweight weapon. This quest involves tracking down a couple of superpowered weapons anyway (and you may find a few other treasures besides), so a little damage nerf now shouldn't be too big a problem. =)
You don't need wraith guard on you until you equip sunder or keening.
Still you shouldn't have that much cap. What do you have on your guy? What takes up 500 pounds?
Maybe drop the Warhammer and use sunder as your hammer. You don't need something as beastly and heavy as a daedric Warhammer especially if you have the legendary sunder. Plus it's one handed.
Go to mournhold and sell off all your healing potions (health, magicka, stamina), and go to the magic store in the bazaar and buy only exclusive healing potions (they restock every time you barter) for less weight and more healing per weight.
Also the possibility of enchanting (or pay for enchanting) your armour with feather effect.
Fortify strength is very useful but I recommend feather for a couple reasons. You can actually reduce your carry weight to 0 with feather while fortify strength just increases your encumbrance. You will move faster with no encumbrance over the fortified strength.
On top of that, fortify strength increases damage and might make you overpowered.
Plus higher strength means more damage to your weapon. Too high of a strength can mean destroying your weapon in only a few hits.
But you're right, fortify strength can increase your carry weight by more, while giving other perks like more damage. I was just suggesting feather so the op doesn't come too overpowered and loses the fun of fighting the final boss dungeons. Especially if he's using two handed hammers which are already savage damage dealers.
They won't end your run. A simple divine intervention will bring you back to a chapel. The worst that would happen (that I've had to do before), was drop all my stuff and run back to town, heal, then go back and get your stuff.

It will. Your 0 strength gives you 0 cap. Drop everything and you can move again.
