First download and install Morrowind Code Patch: https://www.nexusmods.com/morrowind/mods/19510
Then download Morrowind Graphic Extender: https://www.nexusmods.com/morrowind/mods/41102
Just open it and you see resolution option. It should be 1920x1080 by default. Then just close the program and you're done!
That's how I did it and it worked
It allowed me to change the res and added alot of vanilla friendly stuff, such as view distance, better water/rain, shadows etc.
It also has head bobbing and stuff like that.
openMW is a game changer, had the same problem with settings. now i can play on ultrawide :D
Morrowind-Resolution-Fix-for-Windows-10-No-Mods-
1.*Install and launch Morrowind at least once, set all settings to desired levels
2.*Open Regedit
3.*Find this Entry in the registry
Computer\HKEY_CURRENT_USER\Software\Classes\VirtualStore\MACHINE\SOFTWARE\WOW6432Node\Bethesda Softworks\Morrowind
4.*Find "Screen Height" and "Screen Width"
5.*Change the circle-tick from "Hexadecimal" to "Decimal" for both the Screen Width and Height
*Set Height Decimal to 1080
*Set Width Decimal to 1920
6.*Don't modify any game settings after that
Enjoy

I found this on internet. It works. I just changed the Resolution with this Hint today.
NO MODS NEEDED!
It's not bad advice, it's just registry editing can be dangerous if you don't know what you're doing is all. If it works, it's fine though.
He goes through the big 3 mods/patches/downloads (all from nexus) that are basically a must for playing Morrowind in 2022 and made the game look way better and full screen. I tried doing it myself based on these other responses and threads on reddit but i couldn't get it to work, but this video breaks it down for the less technically advanced!
He also goes through some very little technical things that are great to know.
Enjoy!
