Give them a name you like, not just some random meme, joke or auto-generated stuff from a website.
Pick the race you like the most. The individual stats, skill bonuses and abilities are mostly important in the early game, so don't worry about them.
As far as class goes, just make sure you pick your preferred weapon type or spell school as a Major skill. If you make a custom class, also select the speciality that matches the skill. You don't want combat to be a chore early on.
And don't worry about levelling speed. Morrowind can be very uneven in how you progress depending on your actions.
But as long as you have some sort of connection to your character, the only real thing left to do is to immerse yourself in the world, talk to whom you want to and do what you want to. It's IMO the best way to get into the game.
The Redguard race gets some nice bonuses, though. Probably the best race for a beginner. Should make your life easier.
I think this is the best answer, really. I keep driving myself insane trying to read up on the best build choices or options because I don't want to gimp myself taking skills I won't really use.

Morrowind isn't a game where you need to min max and play efficiently
Any character can get through Morrowind fine, though in the early game, the main hurdle is having the skills to be able to kill things and take hits.
So long as whatever you choose has a weapon and armour skill as Majors, and you manage your fatigue bar (either through potions, spells, enchanted items or ‘not running all the time’), you should be fine as a Beginner. Skills can also be trained later if you wish to increase something that started as Miscellaneous; so long as whatever you have can get you through early game, it doesn’t really matter if it isn’t ‘optimal’.
If you go Khajiit, Short Blade and Light Armour are good choices, and there’s a few decent short blades for sale in Balmora from various merchants.
Morrowind is NOT the other ES games. Khajiit and Argonian can make extremely good OP'ed builds.

Probably you can mod beast races so it will able to wear all armor. Its not really necessary, but there are some nice artifacts for these slots.
Also dont bother about x2-5 stats for level up, you easily will hit 70 lvl and will get at least 6 stats per lvl, what makes almost 100 for every stat in the end. Just use trainers for spare cash or if its your vibe - turn on "eye of the tiger" and go to the gym )
A little advice - try to play it as its your only life, without savescumming, unless you are learning mechanics. So take every fight seriously and get prepared, use everything you can(scrolls,potions, if you need - run and escape, etc).
Hidden high value treasure mixed with very little waypoint navigation is part of what always draws me to Morrowind. There's a real sense of discovery in this game I haven't been able to get anywhere else.

I would say what you feel a connection to the most as well. Personally I kind of wish I created a Dunmer because I love the RP value of a foreigner trying to adopt the native lifestyle and the interactions along with that. I even use a 'Native Ebony Armor' mod which creates Bonemold looking armor but is Heavy Ebony.
I guess on my 'Battlewizard' Gandalf type build I am doing I imagine a wholesome but silent 'Noir from The Boys' who is entirely respectful of the natives but is battling his own demons.
The quest lines for the main quest don’t get overly difficult at first. Highly recommend you employ what I call the YoYo method of traveling for the later part of the quest. ( you mark wherever you are questing or looting then use an intervention sell your loot or resupply and then recall back to where you just where )
