if you kill him
No it's really not, the game flags quests and people as dead when you kill them which doesn't get unflagged when you revive them. You'll still break the main quest even if you revive him.
If you're using cheats to revive him anyway, then just use them to spawn your own daedric armour instead
The armor really is only good because its the best enchanters gear otherwise tbh you don't really need it. You would be better off obtaining glass armor if you are new to the game because its easier to get.

Also there are (I know of 2) some NPC's who were either cut out of the main quest or some sadistic dev left this message on them just to scare you, yet they can be killed.
Assuming that they may be new to the game here as per the question at hand. I mean sure they may be able to fight one but if we are generally talking about someone new then its probably going to be a difficult fight if at all possible.
Not true there is very little scaling in Morrowind Majority of mobs have fixed values. The only one i can think of of the top of my head that scales to your Level is the DB assassin.
