What are the best key binds for Morrowind?

Whatever you like. I have (at least basic ones) space for jumping, E as use key (here called "action"?), "WSAD" for movement, "F" for showing/hiding weapon, left mouse button for attacking, right mouse button for opening character sheet, inventory, map, etc. (yes, it is all opened with one button) and that is all, I think.

How do you get things to open with one button like that?

You have all information on the screen: Character sheet in upper left part of the screen, map on the upper right part of screen, you just have to switch between local and world map there. And in downer part of the screen you have your inventory + equipped stuff. This all is opened and closed with right mouse button.
